Q: What is Twelve Cake? 

A: It’s a cake we eat to celebrate the Damiá New Year. It’s a simple cake but we add twelve special ingredients to it for each month of the year. You can choose whichever twelve ingredients you like, but it’s a good idea that they’re delicious things! For example: hazelnuts, raisins, apple, apricot, chocolate, marzipan, jam, cherries, etc, etc. The twelve ingredients are a reminder of the twelve months of the year. When you add each ingredient to the bowl, you can make a wish for each month!

INGREDIENTS
400g 12 special ingredients
125g softened margarine
3 large eggs (or an egg substitute)
60ml (plant) milk
125g dark sugar
250g self-raising flour
a pinch of cinnamon
a pinch of allspice
a pinch of nutmeg

METHOD
heat the oven to 170 C
grease a cake tin with margarine
mix the 12 special ingredients in a bowl and put aside

combine all ingredients except for the 12 special ingredients in a large bowl
mix well
add the 12 special ingredients
fold in gently
pour into the cake tin
make a hollow in the top of the mixture so the cakes bakes flat

bake for 1 hour and 15 minutes
test with a knife – the blade should come out of the cake clean
if the cake isn’t ready, back for 10 more minutes and test again

leave to cool for 10 minutes
turn out onto a wire rack
store in an airtight container
